OUR STORY

The Souders Cookery Recipe Blog is a joint venture between two companies and two great friends that go all the way back to 1995.  Rick Souders of Souders Studios and Shelly Ruybalid of Compact Cooking both love cooking food, eating food and creating new recipes.  So it was only natural that we would team up, create a blog that has really good food, good recipes and good photography.  On this site you will get weekly new recipes and a beautiful color image to go with it.  You can go through all the categories to find the food of your choosing.  Enjoy your weekly updates.  Feel free to tweet these to your friends.  (all photographs on this site are property of Souders Studios, Inc. and are copyright protected.)

Old Fashioned Concord Grape Pie

4 cups Concord seedless grapes
2 teaspoons lemon juice
1 cup sugar
3 tablespoons quick cooking tapioca or ¼ cup flour
1 tablespoon butter
½ tablespoon cornstarch
Pastry for one 8” pie pan
 
Oat Streusel Topping:
½ cup quick-cooking rolled oats
½ cup brown sugar
¼ cup flour
¼ teaspoon allspice
¼ cup butter
 
To make Streusel:
Combine oats, brown sugar, flour and allspice. Cut in butter until evenly distributed.
 
Wash concord grapes and remove skins by pinching at end opposite stem, reserve skins. Place pulp in saucepan and simmer about 5 minutes until soft. If you are not using seedless grapes, push pulp through sieve to catch seeds. Mix pulp with skins. Stir in sugar, tapioca or flour, lemon juice, butter and cornstarch. Simmer an additional 5 minutes. Let mixture cool. Place grape filing in a pastry lined pie pan.  Sprinkle oat streusel on top. Bake at 375°F for 40 minutes. Cool for 1 hour before serving.
 Yields: 6-8 servings (one pie)
