OUR STORY

The Souders Cookery Recipe Blog is a joint venture between two companies and two great friends that go all the way back to 1995.  Rick Souders of Souders Studios and Shelly Ruybalid of Compact Cooking both love cooking food, eating food and creating new recipes.  So it was only natural that we would team up, create a blog that has really good food, good recipes and good photography.  On this site you will get weekly new recipes and a beautiful color image to go with it.  You can go through all the categories to find the food of your choosing.  Enjoy your weekly updates.  Feel free to tweet these to your friends.  (all photographs on this site are property of Souders Studios, Inc. and are copyright protected.)

Southwestern Chicken Quesadillas

4 large flour tortillas
1 lb Tequila Marinated Chicken (*see Cook’s note)
1 cup cheddar cheese, grated
1 cup smoked gouda cheese, grated
½ cup roasted corn
½ red bell pepper, chopped
½ cup green onions, chopped

 - find Tequila Marinated Chicken in the Sauces/Rubs section
 
Heat a large, heavy frying pan to medium high heat. Oil the pan. Take one tortilla and place it in the pan.  Flip the tortilla a few times, 10 seconds between flips.  When air pockets begin to form and tortilla is warm, start adding ingredients.  Layer ¼ of cheese, chicken, pepper, corn, and green onions on the tortilla.  Keep in mind not to overload the tortilla.  Fold the tortilla in half.  Reduce heat to low.  The pan should have enough residual heat to melt the cheese and brown the tortilla.  Cover and let cook until cheese is melted.  Flip once to brown the tortilla on both sides. Remove from pan and cut into wedges.  Repeat 3 more times with the rest of the ingredients.
